Skim milk is a product that is produced when water is removed from pasteurized lean milk. By depriving the microorganisms of the water they need to grow, drying allows the powdered milk to last up to 3 years when stored properly. It is composed of proteins containing lactose, milk protein and minerals in relative similarity to the fresh milk from which it is made. Eskim milk powder is the most common type of milk powder available.
